Butternut squash Cannelloni

I've been wanting to make this for a while now. I saw it in the Cornicopia cookbook. When I made it last night I didn't use the recipe though. I rarely use recipes, to much to follow and you never have half the ingredients.

Anyhow I started off by roasting some Butternut squash chunks, some red pepper and carrot. I roasted them with oil and honey.
Meanwhile I made the tomato sauce.


When all the veg was roasted I mashed it all up with ricotta cheese to make it all moist and creamy.


Out of the oven and topped with chesse!






Making cupcakes with brownie mixture inside them has been on my mind for a while. I've been dying to make them for ages, so I made them on Thrusday night. They were a bit of a dissapointment and just didn't work out as well as I would of liked. :(
Haha I had also gotten a piping bag that day for icing. I now know that I am not good at it what so ever. So excuse the terrible terrible icing job. I had also broken the bag haha.

I just made loads of brownie cupcakes with the left over mixture! Some got a little burnt though.




I REALLLLLYYY want to make cupcakes now.

Lazy blog

I've been so tired and busy with college I haven't had the time or energy to be bothered to write a blog. Plus I've been adding up food pieces for just the one post. I was about to write this last night but was asleep the minute I got into bed.

Ok, pizzza. I love dominoes like most people. When I get it I love to savour it and eat it slow instead of wolfing it down. I love it with a salad and salad cream!

Dominoes cookies are always worth a mention. Seriously get them.


Home made really quick pizza. Sliced tomato, Cheese and basil under the grill!


Itsa bagel. Best bagels. If you think the bagel factory is delish, this is even more delish. There's just at the back of arnotts and one in Dunloire as far as I'm aware. I always get 'The kind veggie'. It has avocado, humous, roasted red pepper, lettuce, onion, tomato, salad dressing. It's so nice.

Falafel pitta. I had this last night for dinner. It was very good. I used different falafels. My mom got some from the Lebanese falafel stand in Dunloire market earlier that day. They're amazing. All crispy on the outside.
Here is everything I put into the pitta. The best part being chili. Burn the mouth of ye.




I baked last night to avoid college work. I made berry cupcakes. We have a load of frozen berries in the freezer. I used them in the mixture and to make icing. The icing didn't turn out to well. I used way to many berries. I really just needed a small bit to colour the icing. I wasn't mad into them, I guess cause I don't really like berries. I didn't care thought because they looked so class and pink! Jesse loved them though and so did people in college.




I love how pink they are!

I had the Belgian waffles today from Hagen Dazz(?) in Temple bar. Im so not arsed looking at how you even spell that.
They were 2.50 euro and sooo worth it. It was so nice and warm and fresh and just delish.

Summer salads and zesty cakes.

Summer time is for colourful salads, even though I eat them all them all year round. I just like the colours and they remind me of a table outside in the summer at a bbq or something.

Anyway.

Salad bowl.
We got red onion, hi jesse, Spinach(In pretty much everything I make), spring onion, tomato, cucumber. You need a delish salad dressing on that, like balsamic.

Lunch box salad. Cheap and healthy but really not satisfying. Give me carbs and lots of them.



I made a lemon cake. Such a summer cake. It was good. Icing fucked up though but still tasted well all the same!


I brought you the microwaved toffe crisp. I now bring you the microwaved Lion Bar, pretty good but nothing compared to the toffe crisp.
Also bourbon creams in the microwave are the best but so addictive.

Tiny tiny dog! This is Bonnie and she's a puppy and sooo cute. I keep seeing her up the hill. But today I saw an even smaller fully grown dog. Was the size of a kitten, You should of seen it try to run.
Chilling on the neighbors trampoline while minding their gaff.
I saw a husky puppy on Killiney Beach the other day. It had 2 big black circles around its eyes like it was wearing glasses, I wish I got a picture.! I've told this story loads.

Tomorrow and Friday will consist of Library assignment cramming sessions. I hope I can stick it to closing times.

Cup cakes.

I got a cupcake stand in Ikea the other day as well as new cupcake cases in tesco, So I just had to make cup cakes.

Killiney Beach

Today was lovely and sunny so my mum and I went to Killiney Beach this morning to walk the dogs. It was soooooooooooooooooooooooooooooooooooooo nice out.
I brought my camera. I rarely do on walks and always regret it.
But I then had to go spend the day in the library, which sucked and was very unproductive.
I wore a t shirt all day though which was class. Weird how simple things like walking around town in a t shirt can make you happy. Good weather changes my mood so much.

Geting constructive and creative

when having no motivation to do college work.

We've had this dresser for years. It used to be a manky pine colour so we painted it Creme.
Yesterday I decided to finally paint it with the left over paint from the kitchen walls. I love it so much.





One of my favourite things about the dresser is the handels. So pretty.
